Marci had a version of this AMAZING breakfast scramble when we were in Tahoe a few weeks ago. We stopped at the Fire Sign Cafe in Tahoe City for breakfast after an incredible weekend in Yosemite, Mammoth Lakes, and South Lake Tahoe and I was inspired by this special they had on their menu and decided to make my own version. I love this restaurant and they always have a few vegan options. If you're ever in the area make sure you stop by and have some of their delicious food! Until then, you can make this super delicious scramble!
Tom and I were recently in Minnesota and had brunch with his Aunt Judy who made us this AMAZING baked oatmeal. It was by far the best breakfast we had while we were in town. Here’s my version of it - full of pecans, dried cranberries, apples, and a few other delicious goodies!

Aw, yeah, its Breakfast Burrito time! This is my #1 Breakfast Burrito because its the best, but I also have another take on a Breakfast Burrito that I'll post later (#2). Who DOESN'T love a breakfast burrito?! Beans, potatoes, onions, peppers, avocados in a deliciously warm grilled tortilla. You can't say no to this one!
This is my absolute favorite breakfast. Tom and I make it almost every Saturday and it really gets us going for a full day of hiking, yard work, or running errands. Its crazy how good a simple and easy sandwich can be.
I've been craving pancakes for a while now, but wanted to find a good non-dairy, no egg recipe. Vega has a ton of great plant-based recipes INCLUDING a pancake recipe! I made it this weekend, but modified it a bit taking out the coconut oil and Vega Sport Performance Protein Vanilla. And they were DELICIOUS!
This is a new take on Huevos Rancheros and it is sooooo good. The tofu is given a little spice and a filler of black beans. The bean-a-dilla is filled with refried beans and is toasted to an awesome crunch on the outside. Its topped with green salsa and a touch of hot sauce. A super filling breakfast I want to eat every day!
