I had a chili very similar to this while Tom and I were on our Scotland Cycling trip. We stopped at the only pub in the middle of the Isle of Lewis and Harris, super hungry and cold, and the owners made me this amazing chili! While the days where I live in San Francisco can be warm and sunny, the evenings plummet and the winds pick up cooling the warm air and letting in the chilly summer nights. The contrast is a little extreme, but then that gives me a reason to enjoy a warm bowl of chili in the summer. Chili is my go to food. I can make it in 30 minutes or I can slow cook it in the crockpot all day. Its super filling, comforting, and absolutely delicious. I've recently come around to the idea of adding sweet potatoes or butternut squash to my chili. I love sweet potatoes (and squash) and chili, but putting them together never seemed like a good idea to me. Until I did - and I'm never looking back!
