I love ratatouille. Originally a French peasant’s dish, this is a super easy yet super delicious recipe you can make in under and hour. Normally I would roast the veggies in my oven, but there’s something summery about grilling the veggies and smelling their aromas while you patiently wait in the outdoors. I made this with two different sauces, tomato and pesto, so pick which one you would like best, or if you can’t decide, make them both like I did. (Don't worry if you don't have a grill - you can easily make this recipe by roasting the vegetables in your oven.)
Looking for another alternative to a typical veggie burger? Try out my portobello mushroom burger! A quick balsamic marinade with garlic and black pepper and you'll be grilling in no time. Top with a zesty red pepper hummus sauce for a tangy zip!
This BBQ Eggplant Sandwich is ridiculously easy and quick - it only has 2 main ingredients. A little peeling, a little slicing, a short marinade, and a quick grill and you're ready for a great summer sandwich. The great thing is you can make exactly as many sandwiches as you like because each slice you cut from the eggplant is one sandwich.

Grilling season is around the corner! These teriyaki tofu kebabs are super simple to put together and only require about 3 hours of marinating: read - 3 hours of your time spent doing other things! Pop them on a skewer with some veggies and your backyard BBQ will be in business!
Part of the Summer Grill Series, this potato salad is a 'classic' version, but with no dairy or eggs. Even the most skeptical eaters found this potato salad delicious! (Don't worry if you don't have a grill, you can still boil or roast the potatoes to make this salad!)
