Indonesian Noodle Peanut Salad

Indonesian Noodle Peanut Salad

This is a super easy salad to put together and it can serve a lot of people! Feel free to half the ingredients to make a smaller amount. Otherwise, this is great for a party or to have for a week’s worth of lunches!

Old School Tacos

Old School Tacos

Remember those tacos you would have on a school night and you couldn’t wait until the next night for leftovers again? My vegan version is made with a combination of quinoa, mushrooms, black beans, and spices and it will bring you back to being a kid again!

Chunky Vegetable Chili & Rice

Chunky Vegetable Chili & Rice

I had a chili very similar to this while Tom and I were on our Scotland Cycling trip. We stopped at the only pub in the middle of the Isle of Lewis and Harris, super hungry and cold, and the owners made me this amazing chili! If you're ever on the Isle of Lewis and Harris be sure to go to the Loch Erisort Inn! Until then, you can make this chili and dream of being on the beautiful island!

My Favorite Fall Salad

My Favorite Fall Salad

This salad is so amazingly good! Its crunchy, sweet, salty and full of fresh and crispy ingredients. I've made a vinaigrette to go along with this salad, but its also good with a dash of Follow Your Heart Vegan Blue Cheese Dressing.

Split Pea Soup

In the need of some serious comfort food? Make this super simple split pea soup - it takes about an hour to get those split peas soft and chewy, but only about 5 minutes to put it together. Then sit back, relax, and enjoy the amazing aromas as this soup comes together.

A Vegan Mother's Day

A Vegan Mother's Day

I'm a firm believer in living a plant based lifestyle for one major reason - to live a long and healthy life. According to the CDC the top disease threat to women is heart disease. But we can change that by changing our lifestyles and eating a whole food, plant based diet. And here are some incredibly delicious and healthy recipes to treat Mom to this Mother's Day. We love our Moms, and if food is love, eat on!

Awesome Almond Salad

Awesome Almond Salad

Do salads sometimes leave you still wanting something more? Not totally satisfying or filling? Try out my awesome Almond Salad and you'll be full throughout the rest of the day! Its one of my favorite lunch time meals especially during the work week when I barely have time to scarf it down! With minimal prep work you'll be happy you spent the extra 20 minutes getting this salad put together ahead of time!

BBQ Jackfruit Pizza

BBQ Jackfruit Pizza

I'm going to say it - this is the best pizza I've ever had. It was super easy to make, so much better than frozen, and cheaper than delivery. It reminds me exactly of a BBQ chicken pizza, only its made with BBQ jackfruit, which is so much healthier. Chicken may be deemed the healthy meat, but its full of cholesterol and saturated fat, while jackfruit has 0 cholesterol, 0 saturated fat, 739 awesome mg of potassium, and is a super source of vitamins, minerals, phytonutrients, electrolytes, fiber, and protein. So not only does this pizza taste good, its incredibly good for you!

Roasted Veg Bowl with Creamy Basil & Parsley Sauce

Roasted Veg Bowl with Creamy Basil & Parsley Sauce

I love this roasted vegetable bowl because you can create a bunch of different versions. Just swap out some of the vegetables for other ones and top over quinoa instead of rice. This bowl is a great reboot if you've been struggling with eating healthy. Not only is it delicious it also makes you feel amazing!

Chickpea Salad Sandwich

Chickpea Salad Sandwich

Looking for a plant based, vegan version of an egg salad sandwich? Look no further! I haven't had egg salad in years and have been missing it, until now! There's something about the combination of mashed chickpeas, Vegenaise, celery, pickle relish, and dill that tastes JUST LIKE an egg salad sandwich!
