I used to love Cuban sandwiches. A grilled cheese with yumminess AND a pickle? Thankfully, because of the good people at Follow Your Heart I can make a similar plant based vegan friendly version with beets! Its insanely good and super easy to make!
I had a chili very similar to this while Tom and I were on our Scotland Cycling trip. We stopped at the only pub in the middle of the Isle of Lewis and Harris, super hungry and cold, and the owners made me this amazing chili! This salad is so amazingly good! Its crunchy, sweet, salty and full of fresh and crispy ingredients. I've made a vinaigrette to go along with this salad, but its also good with a dash of Follow Your Heart Vegan Blue Cheese Dressing.

I'm going to say it - this is the best pizza I've ever had. It was super easy to make, so much better than frozen, and cheaper than delivery. It reminds me exactly of a BBQ chicken pizza, only its made with BBQ jackfruit, which is so much healthier. Chicken may be deemed the healthy meat, but its full of cholesterol and saturated fat, while jackfruit has 0 cholesterol, 0 saturated fat, 739 awesome mg of potassium, and is a super source of vitamins, minerals, phytonutrients, electrolytes, fiber, and protein. So not only does this pizza taste good, its incredibly good for you!
I love this roasted vegetable bowl because you can create a bunch of different versions. Just swap out some of the vegetables for other ones and top over quinoa instead of rice. This bowl is a great reboot if you've been struggling with eating healthy. Not only is it delicious it also makes you feel amazing!

I love ratatouille. Originally a French peasant’s dish, this is a super easy yet super delicious recipe you can make in under and hour. Normally I would roast the veggies in my oven, but there’s something summery about grilling the veggies and smelling their aromas while you patiently wait in the outdoors. I made this with two different sauces, tomato and pesto, so pick which one you would like best, or if you can’t decide, make them both like I did. (Don't worry if you don't have a grill - you can easily make this recipe by roasting the vegetables in your oven.)
