10 Recipes to Get You Ready For Fall

I love fall - the weather starts to cool down, the leaves change into magnificent reds, yellows, and oranges, apples, pumpkins, and butternut squash are in abundance, and soup is always on the menu. Here are my favorite 10 recipes to bring you into the changing of the seasons!

Tom and I were recently in Minnesota and had brunch with his Aunt Judy who made us this AMAZING baked oatmeal. It was by far the best breakfast we had while we were in town. Here’s my version of it - full of pecans, dried cranberries, apples, and a few other delicious goodies! 

This salad is so amazingly good! Its crunchy, sweet, salty and full of fresh and crispy ingredients. I've made a vinaigrette to go along with this salad, but its also good with a dash of Follow Your Heart Vegan Blue Cheese Dressing.

You'll never have to buy store applesauce again! Its so incredibly easy to make - 30 minutes and you have delicious applesauce for eating on its own or using in replacement for oil when baking. 

Simple soups may be one of my most favorite things and this soup can't get any easier. Carrots, onions, ginger, curry powder and vegetable broth. Easy peasy with a touch of cashew cream. Dinner will be ready in under 30 minutes!

I’ve been trying to come up with new whole grain recipes to eat the night before my long runs. I’ve been veering away from pastas because I’ve noticed I run better when I eat unprocessed grains like rice and quinoa. This tomato soup was perfect fuel for my 6 mile Saturday run and was quick and easy enough to make on a tired Friday night! 

I had a chili very similar to this while Tom and I were on our Scotland Cycling trip. We stopped at the only pub in the middle of the Isle of Lewis and Harris, super hungry and cold, and the owners made me this amazing chili!
