Aloo Goobi

Aloo Goobi is an Indian dish made with potatoes and cauliflower. It's one of my absolutely favorite meals! There's just a little prep to it and soon you'll too be enjoying warm and spicy potatoes and cauliflower!

Serves 4

Ingredients

Aloo Goobi

  • 3 russet potatoes, diced
  • 1 head cauliflower, chopped
  • 1 onion, diced
  • 1 garlic clove, chopped
  • 1 tbsp cumin
  • 1 tbsp garam masala
  • 1 tbsp coriander
  • 1 cup vegetable broth
  • 1 1/2 cups water
  • 1 lemon, juiced
  • 1 handful cilantro, chopped

Saute the Onion & Spices

In a large pot, saute the chopped onion in 1/2 a cup of water with the garlic, cumin, garam masala, and coriander.

Potatoes & Cauliflower

Once the onions are translucent, add in the potatoes, cauliflower, vegetable broth, and one cup water and cover. Cook about 30 minutes, checking every 5-10 to stir the pot.

Once the potatoes and cauliflower are soft, squeeze the juice of one lemon over the top and top with a handful of chopped cilantro.
