Aloo Goobi is an Indian dish made with potatoes and cauliflower. It's one of my absolutely favorite meals! There's just a little prep to it and soon you'll too be enjoying warm and spicy potatoes and cauliflower!
2 cups potatoes, diced 2 cups cauliflower, chopped 1 onion, diced 2 garlic cloves, chopped 1 tbsp ginger, minced 1 tsp turmeric 1/2 tsp coriander 1/2 tsp cumin 1 cup vegetable broth 1/2 can lite coconut milk 1 lemon, juiced cayenne pepper, to taste 1 cup cilantro 1/2 cup mint 1/2 clove garlic 1/2 tbsp ginger
1/2 lemon, juiced 1/2 jalapeno (skip if you don't want it spicy) 1 green onion 1/4 cup water
Sauté the Onion & Spices
In a large pot, sauté the chopped onion in 1/2 a cup of vegetable with the garlic, ginger, turmeric, coriander, and cumin.
Potatoes & Cauliflower
Once the onions are translucent, add in the potatoes, cauliflower, remaining vegetable broth, and half a can of lite coconut milk. Cook about 30 minutes, checking every 5-10 to stir the pot.
Once the potatoes and cauliflower are soft, squeeze the juice of one lemon over the top and add in any cayenne pepper depending on how hot you want it.
make the green chutney
While the soup is cooking, combine the cilantro, mint, garlic, ginger, lemon juice, jalapeño, and green onions in your Vitamix, food processor, or blender. Carefully pour in the water while the ingredients blend so you don’t make it too thin. The chutney should be a little soupy in consistency, but not overly thin.
