Asian Slaw Salad with Peanut Dressing

This salad is super easy, super quick, and sooooo good! Crunchy, sweet, sour, and super refreshing. Its a take on my Lettuce Wraps, but less fussy than dealing with lettuce leaves as your wrap. You can buy most of these ingredients pre-shredded so all you really have to do is mix them together in a bowl. Minimal chopping required! 


Serves 4-6


Asian Slaw Salad Ingredients

  • 2 cups romaine, shredded
  • 1 cup broccoli slaw
  • 1 cup cabbage, shredded
  • 3 green onions, diced
  • 1 cup cucumber, diced
  • 1 can water chestnuts, drained & minced
  • 1 cup sliced almonds
  • 1/2 cup shelled sunflower seeds
  • 1 cup mango, diced


Combine all the ingredients together and dress with your favorite dressing or try my Peanut Dressing.

Makes almost 1 cup


Peanut Dressing

  • 2 tbsp peanut butter
  • 2 tbsp low sodium soy sauce
  • 2 tbsp rice wine vinegar
  • 4 tbsp pineapple juice
  • 1 tbsp cilantro, finely chopped
  • 1 tbsp green onions, finely chopped


In a bowl, add 2 heaping kitchen tablespoons of peanut butter (not the measuring spoon - for some reason I don’t think they are the same size as kitchen tablespoons).

Add the soy sauce, rice vinegar, pineapple juice and mix thoroughly.
