This BBQ Eggplant Sandwich is ridiculously easy and quick - it only has 2 main ingredients. A little peeling, a little slicing, a short marinade, and a quick grill and you're ready for a great summer sandwich. The great thing is you can make exactly as many sandwiches as you like because each slice you cut from the eggplant is one sandwich.
Serves as many sandwiches as slices you cut from the eggplant.
1 eggplant, sliced into 1/2" rounds
1 cup BBQ sauce
spinach or lettuce
1/2 red onion, sliced
2 pickles, sliced
Peel & Slice
Peel the eggplant and slice it into 1/2" rounds. Each slice is one sandwich.
Add each of the slices to a large baking dish and pour the BBQ sauce over the top, flipping each eggplant slice to cover completely in the sauce. Marinate in your refrigerator for at least an hour and at the most overnight.
Over your gas or charcoal grill, place each eggplant slice and cook about 10 minutes before flipping. If the eggplant is sticking to your grill, let it sit a little longer before trying to flip again.
Serve each eggplant slice on a hamburger bun and add sliced red onions, pickles and tomatoes if you wish!
