BBQ Jackfruit Pizza

I'm going to say it - this is the best pizza I've ever had. It was super easy to make, so much better than frozen, and cheaper than delivery. It reminds me exactly of a BBQ chicken pizza, only its made with BBQ jackfruit, which is so much healthier. Chicken may be deemed the healthy meat, but its full of cholesterol and saturated fat, while jackfruit has 0 cholesterol, 0 saturated fat, 739 awesome mg of potassium, and is a super source of vitamins, minerals, phytonutrients, electrolytes, fiber, and protein. So not only does this pizza taste good, its incredibly good for you!

Jackfruit is a giant fruit that comes from Asia and can be found in grocery stores canned either in brine or in syrup. You'll want to avoid the sugary syrup based cans and go for jackfruit in brine. If you can't find it at your local grocery store (I only recently found it at Trader Joe's), you can buy it off of Amazon, which is where I've been purchasing it. 

Serves 4

BBQ Jackfruit Pizza

  • 1 jar BBQ sauce
  • 2 cans jackfruit in brine
  • 1 onion, chopped
  • 1/2 green bell pepper, thinly sliced
  • 1/2 cup pinapple, chopped
  • 1/2 red onion, thinly sliced
  • 2 frozen pizza shells
  • 1/4 cup cilantro, chopped - optional
  • 1/2 cup vegan mozzarella - optional

Cook the Jackfruit

You can cook the jackfruit 2 different ways, either on your stovetop or in your slow cooker.

If you’re cooking on your stovetop, cook 1 chopped onion in 1/4 of water. Add in 2 drained cans of jackfruit in brine and cover with 1 jar of BBQ sauce, saving 1/2 a cup for the pizza as the sauce. Cook for about 30 minutes, half covered so the jackfruit can break down into the BBQ sauce. Use a potato masher at the end to break up the jackfruit and it will break down into a shredded meat consistency.

If you’re cooking in your slow cooker, add in 1 chopped onion, 2 cans of drained jackfruit in brine and cover with 1 jar of BBQ sauce, saving 1/2 a cup for the pizza as the sauce. Cook in medium heat for about 6 hours. Use a potato masher at the end to break up the jackfruit and it will break down int a shredded meat consistency.

Assemble the Pizza

Back to good old Trader Joe’s, I like using their frozen pizza crusts for this pizza. They’re pre- made and shaped so it makes assembling the pizza super easy. 2 crusts come in 1 package so plan on making 2 medium sized pizzas if you’re using your own crust or another brand.

Assemble the pizza by splitting the remaining 1/2 cup of bbq sauce between the two and spreading out over the crust. Top with a good amount of the shredded jackfruit, sliced red onions and green bell peppers, and chopped pineapple. Here you can add on any vegan mozzarella that you may like, but personally I think it tastes great without it.

Bake for about 15-20 minutes, or according to the crust that you’re using’s instructions. Top with cilantro when done if you’d like and enjoy!
