BBQ Tofu Salad

I baked the tofu in this recipe to make it firmer so it doesn't break down in the salad. The key is to toss it in the BBQ sauce after baking. Crunchy, sweet, and super delicious!

BBQ Tofu Salad
  • 4 cups mixed greens
  • 1 cup celery, chopped
  • 1 cup carrots, chopped or shredded
  • 1 cup frozen corn, thawed
  • 1/2 cup red onions, finely chopped
  • 1 cup tomatoes, chopped
  • 1 cup cucumber, chopped
  • 1 can black beans, drained & rinsed
  • 1 block tofu, sliced into 1/4" squares
  • 1/2 cup - 1 cup BBQ sauce
  • Avocado Lime Dressing

  • Bake The Tofu

    Chop the tofu into 1/4" squares and add to a silicon baking sheet. Bake at 350 degrees for about 20 minutes, then flip (or move around as best you can) and bake for another 20 minutes.


    Chop the remaining ingredients and mix together in a large bowl.


    Once the tofu is done baking combine with BBQ sauce and toss in with the salad.

    Dress with more BBQ sauce and Avocado Lime Dressing.
