Black Bean, Quinoa Mexi-Style Salad

I'm amazed by the simplicity of this salad and also how incredibly delicious it is with only a squeeze of lime and lemon juice to enhance its flavors. Refreshing and filling this is a great cold salad on a hot day.


Serves 4-6


Black Bean Quinoa Mexi Style Salad

  • 1 cup cooked and cooled quinoa
  • 1 can black beans, drained & rinsed
  • 2 tomatoes, diced
  • 1 bell pepper, diced
  • 3-4 radishes, sliced
  • 3 green onions, diced
  • 1 cup cucumber, diced
  • 1 cup corn, frozen (and thawed) or freshly grilled
  • juice of 2 limes
  • juice of 1 lemon
  • 2 avocados, diced - optional
  • 1/2 cup salsa - optional


Cook and cool the quinoa.


Combine all the ingredients together. Seriously, that's it!
