I'm amazed by the simplicity of this salad and also how incredibly delicious it is with only a squeeze of lime and lemon juice to enhance its flavors. Refreshing and filling this is a great cold salad on a hot day.
Black Bean Quinoa Mexi Style Salad
- 1 cup cooked and cooled quinoa
- 1 can black beans, drained & rinsed
- 2 tomatoes, diced
- 1 bell pepper, diced
- 3-4 radishes, sliced
- 3 green onions, diced
- 1 cup cucumber, diced
- 1 cup corn, frozen (and thawed) or freshly grilled
- juice of 2 limes
- juice of 1 lemon
- 2 avocados, diced - optional
- 1/2 cup salsa - optional
Cook and cool the quinoa.
Combine all the ingredients together. Seriously, that's it!
