Burrito Bowl

This Burrito Bowl is what you need to try when you want to go plant based and you're not sure what to eat. Its super easy, full of protein, iron, and calcium, and its incredibly tasty. I usually eat this Burrito Bowl at least once a week!

Warm Burrito Bowl

Burrito Bowl

  • 1 cup brown rice, uncooked
  • 1 can black beans, drained & rinsed
  • 1/2 white or yellow onion, diced
  • 1 red pepper, diced
  • 1 cup water
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp oregano, dried
  • 1 avocado
  • 3 tomatoes, diced
  • 2 cups spinach, chopped
  • 1/2 cup salsa
  • 2-3 green onions, chopped
  • 1 lime, juiced
  • hot sauce, optional
  • 1/4 cup fresh cilantro, chopped, optional

Cook the Rice

On your stove top or in your rice cooker, cook 1 cup of dry brown rice in 2 cups water (or according to the package directions).

Sauté Onions and Peppers

In a pan on your stove, combine 1/2 a diced white or yellow onion, 1 diced red pepper, 1/2 cup of water, 1 tsp of cumin, and 1 tsp of chili powder and sauté for about 10 minutes until the veggies are soft.

Heat the Beans

In a saucepan on your stove top, combine 1 can of drained and rinsed black beans, 1/2 cup of water, 1 tsp of cumin, 1 tsp of chili powder, and 1 tsp of oregano and simmer for about 10 minutes until the liquid is reabsorbed into the beans. 

Chop & Mix

While everything is cooking, sautéing, and simmering, chop up 3 tomatoes, 2 cups of spinach, 2-3 green onions, and 1/4 cup cilantro (if you're using it). Mix together in a large bowl and set aside. 


Once the rice, onions and peppers, and beans are done, add to the bowl of fresh chopped veggies and mix together. Add in the juice of 1 lime, 1/2 a cup of salsa, avocado, and mix together. Divide into two bowls and top with any additional hot sauce you'd like!
