Chickpea Olive Wraps

This is a super delicious wrap that can also be eaten on its own sans tortilla. Fresh, savory, and crunchy, a great picnic wrap or road trip wrap.

Ingredients

Chickpea Olive Wraps

  • 4 tortillas
  • 1 can chickpeas, drained & rinsed
  • 1/4 cup kalamata olives, chopped
  • 2 tomatoes
  • 1/2 cup cucumber, peeled & diced
  • 1/4 cup green pepper, diced
  • 1/4 cup fresh mint, diced
  • 1/4 cup fresh parsley, diced
  • 2 tbsp red wine vinegar
  • juice of 1 lemon
  • 1 tsp dried oregano
  • 1/4 tsp black pepper
  • 1/4 cup red onions, sliced
  • 1/4 cup sprouts of any kind
  • 1/2 cup spinach

Combine

In a bowl, combine the chickpeas, olives, tomatoes, cucumbers, green pepper, mint, parsley, red wine vinegar, lemon juice, oregano, and black pepper. Mix well. You can easily refrigerate this for at least an hour if you want the flavors to join together, otherwise, you can be like me and eat it right away!

Wrap It, Wrap It Good

Lay your wrap flat and add a layer of spinach, sprouts, and red onions. Add a generous layer of the chickpea mix to the top and wrip it up tightly. Enjoy!
