Chickpea Salad

I had a salad like this the night before my first marathon and it helped fuel me for those long 26.2 miles! This is also a great party salad, side salad, or lunch time salad!

Ingredients

Chickpea Salad

  • 1 can chickpeas, drained & rinsed
  • 1 cup carrots, shredded
  • 1/2 cup cucumber, chopped
  • 1 green bell pepper, chopped
  • 2 green onions, chopped
  • 1/2 cup dried cranberries
  • 2 tbsp red wine vinegar
  • 1 lemon, juiced

Chop & Mix

Chop and mix all the ingredients together! Toss with red wine vinegar and lemon juice - that's it!

(PS - the picture is missing the dried cranberries - sorry about that! But include them - they make the salad!)
