Looking for a plant based, vegan version of an egg salad sandwich? Look no further! I haven't had egg salad in years and have been missing it, until now! There's something about the combination of mashed chickpeas, Vegenaise, celery, pickle relish, and dill that tastes JUST LIKE an egg salad sandwich!
Makes 2 Sandwiches
1 can chickpeas, drained & rinsed
1 tbsp Vegenaise
1/2 cup celery, chopped
1 green onion, chopped
1 tsp dill pickle relish
lemon juice, to taste
1 tbsp dill, fresh or dried
4 slices bread
Mash the Chickpeas
In a large bowl, mash the drained and rinsed chickpeas with a fork or potato masher.
Chop and Combine
Add in 1 tbsp Vegenaise, 1/2 cup of chopped celery, 1 chopped green onion, 1 tsp dill pickle relish, a squeeze of lemon juice, and 1 tbsp of fresh or dried dill.
Mix together and adjust taste with additional Vegenaise, lemon juice, or dill as desired!
Serve on bread with spinach or eat right out of the bowl!
