Happy Cinco de Mayo! Try out some of my favorite recipes for a great plant based Cinco de Mayo!


What's jackfruit you ask? Jackfruit is a giant fruit that comes from Asia and when cooked breaks down like shredded meat. Its a little sweet, a little tangy, and makes for AMAZING shredded tacos! 


Mexi Tacos

Hold on to your hats, these tacos are going to blow your MIND! They are SO easy and quick to make. Roast some sweet potatoes, heat up some black beans and onions, make the cashew cheese, and top with more deliciousness!


Aw, yeah, its Breakfast Burrito time! This is my #1 Breakfast Burrito because its the best, but I also have another take on a Breakfast Burrito (#2). Who DOESN'T love a breakfast burrito?! Beans, potatoes, onions, peppers, avocados in a deliciously warm grilled tortilla. You can't say no to this one!


Its hard to find something better than a Breakfast Burrito, but these Breakfast Tacos give them a run for their deliciousness! Save some time and purchase pre-made pico de gallo and salsa verde and you’ll have these ready in no time!

Its almost hard to call this a dip because of its massive size. Still, its a new take on the typical ‘taco dip’. This bean dip is great for a party of 6 or a party of 2! Super quick and easy to make, I promise this won’t disappoint! 

 


This Burrito Bowl is what you need to try when you want to go plant based and you're not sure what to eat. Its super easy, full of protein, iron, and calcium, and its incredibly tasty. I usually eat this Burrito Bowl at least once a week!


I probably make Burrito Bowls for dinner about once a week. They are quick, easy, insanely good and great for lunch leftovers. Black beans, tomatoes, quinoa, avocados and more! They're a great source of protein, iron, and calcium.


Taco Salad

Taco Salad in a few minutes! 'Nuf said!


I find that the simpler something is, the more I like it, and it can’t get any simpler with this soup. Incredibly easy and incredibly tasty!


I'm amazed by the simplicity of this salad and also how incredibly delicious it is with only a squeeze of lime and lemon juice to enhance its flavors. Refreshing and filling this is a great cold salad on a hot day.


All I can say is YUM. This was my first time making a mexi-style lasagne and I'm officially hooked. The veggies are a little crunchy, and the beans and sauce are warm and a little spicy. Loads of veggies, super healthy, and a filling meal!


Don't fear the cashew cream. It is AWESOME. The flavor is like a cheese sauce, but a little nutty, a little garlicky, and super delicious. My goal with this recipe was to make enchiladas, but I tend to go overboard with the filling and topping so it ends up more like a casserole. I almost like it better as a casserole because its easier to serve up. AND it makes great leftovers.


Tacos - delicious. Pasta salad - delicious. Put them together - deliciousness explosion! Yeah, I'm excited about this one. Spicy, tangy, crunchy, and crazy good!


A super simple and super delicious green salsa you can keep mild or heat up with more jalapeños as desired.


You'll never have to buy salsa again! This quick chopped pico de gallo is incredibly fresh and incredibly delicious. So get out your knives and get chopping! 


As my friends and family know, sometimes I go a little overboard when I proportion things out. It must be my Polish roots, but I'd rather have too much food for friends and family than not enough. Hence the MASSIVE amount of salsa this recipe made. Feel free to cut it in half, or if you want enough for a week, make the full amount. Its good with chips, on black bean burgers, in breakfast burritos, and on taco salads as well as many other things!


This is a super quick salsa to make if you don't have fresh tomatoes on hand.
