Summer may be on the horizon with this salad! Salty artichokes and olives, sweet tomatoes, tart lemon juice, and fresh herbs. You can add some whole grains like quinoa or farro to bulk up this salad or add in a handful of spinach to fill it out more.
Cucumber Artichoke Chopped Salad
- 2 tomatoes, roughly chopped
- 1/2 cucumber, roughly chopped
- 1 can artichokes
- 1 can black olives
- 1 tbsp fresh parsley, minced
- 1 tbsp fresh mint, minced
- 1 tbsp red wine vinegar
- 1 lemon, juiced
Chop & Combine
Drain and rinse the canned artichokes and black olives. Chop the tomatoes, cucumbers, parsley, and mint and toss together. Mix in the red wine vinegar and lemon juice and refrigerate about 30 minutes before serving.
