Easy Cauliflower Curry

I love curry.  I LOOOOOOOVE curry. Its a little sweet, its a little spicy, its creamy, its warming, its like tucking under a cozy blanket and snuggling in. Curry comes in many forms and this is my super simple, super easy cauliflower curry recipe. Get out your crockpot and get ready to set it and forget it!

Easy Cauliflower Curry

Serves 4-6

Ingredients

Easy Cauliflower Curry

  • 1 head cauliflower, chopped
  • 1 white potato, diced
  • 1 sweet potato, peeled & diced
  • 4 carrots, peeled & diced
  • 1/2 onion, diced
  • 1 can light coconut milk
  • 1 15 oz can diced tomatoes
  • 1 lemon, juiced
  • 1 tbsp cumin
  • 1 tbsp curry powder
  • 1 tbsp garam masala
  • 1 tbsp ground coriander
  • 1 tsp turmeric
  • 1 tbsp chili powder
  • salt, to taste

Slow Cooker Instructions

Chop the cauliflower, white potato, sweet potato, carrots, and onion and toss in your slow cooker. Add in the rest of the ingredients and mix thoroughly. Set on low for 6 hours or high for 4 hours. Squeeze on any additional lemon juice and top with any additional salt to taste.

Stove Top Instructions

In a large pot, combine the onion, coconut milk, diced tomatoes, curry powder, garam masala, coriander, turmeric, and chili powder and cook for about 5 minutes.

Add in the rest of the ingredients and stir thoroughly. Cook on medium high for 45 minutes to one hour until the veggies are soft.
