Its Friday - you're tired from a long week, who wants to think about making dinner? If you think you can't eat healthy fast food I'm here to change your mind! All these recipes can be ready in under 30 minutes and they're super delicious and filling! Today's recipe - Egg Roll Bowl! This recipe is perfect because you can change its flavor based on your favorite sauces: soy sauce, hoisin, sweet and sour, or spicy mustard!
Egg Roll Bowl
- 2 cups brown rice, precooked or use instant
- 2 cups broccoli slaw
- 1 cup bean sprouts
- 2 cloves garlic, minced
- 1" piece ginger, minced
- 3 green onions, chopped
- 2 tbsp soy sauce
- 2 tbsp vegetarian hoisin sauce
- 1 cup water
- sweet and sour sauce - optional
- hot chinese mustard - optional
In a large pot on your stove, sauté the broccoli slaw, bean sprouts, garlic, and ginger together in 1 cup of water. After about 5 minutes add in the soy sauce and vegetarian hoisin sauce.
Continue cooking for another 10 minutes. While cooking, make the instant brown rice (unless you have precooked brown rice on hand).
Once the brown rice is cooked, mix in with the veggies. Top with chopped green onions and serve with any additional soy sauce, vegetarian hoisin sauce, sweet and sour sauce, or hot Chinese mustard!
