Grilled Green Bean, Tomato, Potato Pesto

A great side or main dish - this recipes includes all things summer: green beans, tomatoes, and fresh basil. A great grilled summer dish!


Serves 2 as a Main Dish


Grilled Green Bean, Tomato, Potato Pesto

    Soup Ingredients
  • 2 cups green beans
  • 1 cup grape tomatoes
  • 1 cup fingerling potatoes
  • 1 cup basil pesto

    Basil Pesto Ingredients
  • 4 oz fresh basil
  • 2 garlic cloves
  • 1/4 cup almonds or walnuts
  • 1/3 cup nutritonal yeast
  • 1 cup water


Prep 2 cups of fresh green beans by washing and snipping off the ends. Set aside.

Half 1 cup of grape tomatoes and set aside.

Wash 1 cup of fingerling potatoes.


Wash the potatoes and wrap 8-10 at a time in foil packets. Add the potatoes to the middle of a sheet of foil and fold up around it. Place the foil packet on your heated grill. You'll grill them for about 15 minutes, then flip, and grill for another 15. Open the foil and check to make sure the potatoes are soft before removing from the grill. Once the potatoes are cooked through add the green beans to a grill pan and cook for about 15 minutes. Add the grape tomatoes at the end for about 5 minutes. Combine with the Pesto Sauce and serve!

Pesto Recipe: Blend

In your Vitamix, food processor, or blender, combine all the pesto ingredients and blend until you get a smooth sauce.
