A yummy summer dinner that encompasses all summer veg with a light and refreshing lemon parsley pesto tossed into little orzo pastas.
Makes 4 servings
Grilled Veg with Lemon Orzo
- Grilled Veg Ingredients
- 1 red onion, chopped
- 1 green pepper, chopped
- 1 yellow summer squash, chopped
- 1 zucchini, chopped
- 1 cup green beans
- Lemon Parsley Pesto Ingredients
- 1 cup parsley
- juice of 3 lemons
- 3 tbsp tahini sauce
- 1 garlic clove
- water, as needed
Make The Pesto
In your Vitamix, food processor, or blender, combine the parsley, lemon juice, tahini sauce, and garlic together and pulse together until you get a smooth sauce. You can add water if you'd like it thinner.
Over medium high heat in a large grill pan, add the veggies and grill for about 25 minutes, stirring often.
Cook The Orzo
While the veggies are grilling, cook the orzo on your stove top according to its directions. Rinse under cool water when done and set aside.
When the veggies are done, mix gently with the pesto and orzo and serve!
