Hawaiian Mac Salad

One of my favorite things about visiting Hawaii is getting served a heaping amount of Mac Salad with a lot of meals. It takes me back to my childhood on warm, sunny days. However, cutting dairy out of my diet now means no Mac Salad (sad face!) BUT! I've recreated it to be dairy free with the help of Vegenaise and gluten free with the help of rice elbow noodles! And it taste just like the Islands! Aloha! 

Hawaiian Mac Salad

Serves 4-6

Hawaiian Mac Salad

  • 2 cups elbow macaroni
  • 1 cup carrots, shredded
  • 1 cup celery, chopped
  • 1 cup vegenaise
  • 1 lemon, juiced
  • 1 tbsp apple cider vinegar
  • 2 green onions
  • black pepper

Boil the Noodles

I used gluten free, rice elbow macaroni and boiled the noodles for 8 minutes. Once done, rinse under cold water or cool in your refrigerator.

Chop & Mix

While the noodles are boiling, combine the carrots, chopped celery, Vegenaise, lemon juice, apple cider vinegar, and chopped green onions. Once the noodles have cooled, mix them in and top with fresh cracked black pepper to taste.
