Hummus & Olive Wraps

I LOVE these wraps! These are my go to wraps when I need something quick, filling, and delicious to eat. A few years ago I was moving in between apartments and didn't have a refrigerator for a week so I packed a cooler with the ingredients of these wraps and ate them every day!

Hummus & Olive Wraps

Makes 2 wraps

Ingredients

Hummus & Olive Wraps

  • 2 tortillas
  • 1 tomato, sliced
  • 1 cup hummus
  • 6 kalamata olives, chopped
  • 1 handful shredded carrots
  • 2 handfuls spinach
  • 2 tbsp green or red onion, chopped
  • 2 tbsp parsley, chopped
  • 1/2 bell pepper, chopped

Fill & Wrap

Chop the ingredients and split in half for each wrap: 1/2 tomato, 1/2 cup hummus, 3 chopped olives, half the handful of carrots, 1 tbsp onions, 1 tbsp parsley, and 1/2 the half of chopped bell pepper.

Spread the hummus out on the bottom the wrap and top with the veggies. Wrap up into a tight burrito and eat IMMEDIATELY!
