So you want corned beef and cabbage, but without the beef and quicker than six to eight hours in your crock pot? MAKE THIS SOUP! It tastes exactly like corned beef & cabbage, but without the beef and only takes about 45 minutes to make!
1/2 onion, chopped
2 cups potatoes, diced
2 cups carrots or parsnips, sliced
1 turnip, peeled & diced - optional
4 cups cabbage, roughly chopped
4 cups vegetable broth
2 cups water
1 tsp black pepper
2 bay leaves
1/2 tsp yellow mustard seeds
Chop and combine everything in a large stockpot on your stove. Simmer for 30-45 minutes or until the potatoes, carrots, and turnips are soft. Remove bay leaves before eating.
