Irish Nachos & Cashew Cheese

Ready for some roasted potato goodness? These Irish Nachos are a great take on traditional nachos using potatoes, lentils, quinoa, onions, salsa, cilantro, and a homemade cashew cheese! Don't fear the cashew cheese - its super easy and super delicious!

Irish Nachos & Cashew Cheese

Serves 2-4

Ingredients

Irish Nachos Ingredients
  • 4 potatoes, sliced into wedges
  • 2 tbsp chili powder (divided)
  • 2 tbsp cumin (divided)
  • 1/2 onion, diced
  • 1/2 cup cooked quinoa
  • 1/2 cup lentils
  • 1 cup water
  • 3-4 green onions, chopped
  • 1/2 cup cilantro, chopped
  • 1 cup lettuce, chopped
  • 1/2 cup Quick Salsa
  • Sriracha

  • Cashew Cheese Ingredients
  • 2 cups raw, unsalted cashews
  • 1 cup water
  • 1 clove garlic
  • 1/3 cup nutritional yeast


  • Roast the Potatoes

    Slice the potatoes into wedges and spread out on a silicon baking mat. Sprinkle with 1 tbsp of chili powder and 1 tbsp of cumin and bake at 400 degrees for 20-30 minutes until they look like this:

    Cook the Quinoa & Lentils

    Cook the quinoa according to its directions. While the quinoa is cooking and the potatoes are roasting, saute 1/2 of an onion in 1 cup of water for about 5 minutes. Add in the lentils, 1 tbsp of cumin, and 1 tbsp of chili powder and simmer until the lentils have cooked through. Once the quinoa is done cooking, add 1/2 cup of cooked quinoa to the lentils and onions.

    The Cashew Cheese

    Cashew Cheese is delicious and super easy to make. Combine 2 cups of raw, unsalted cashews with 1 clove of garlic and 1/3 cup of nutritional yeast to your Vitamix, food processor, or blender. Add in 1/2 cup of water and start pureeing. Continue to add in the water until you have a thick paste. Blend until smooth.

    Assemble

    Assemble the Irish Nachos as follows: layer the potatoes on the bottom, top with salsa, chopped lettuce, cilantro, green onions, cashew cheese, and sriracha. Enjoy!
