Japanese Noodle Bowl

I love this soup - its perfect for a chilly winter night and is super quick and simple to put together. You can have it as spicy or salty as you’d like with additional Sriracha and Soy Sauce!

Ingredients

Japanese Noodle Bowl

  • 8 cups vegetable broth
  • 2 cloves garlic, chopped
  • 1" piece of ginger, chopped
  • 2 cups mushrooms, sliced
  • 2 cups carrots, shredded
  • 2 cups broccoli, chopped
  • 2 cups bean sprouts
  • 4 green onions, chopped
  • 1 cup cilantro, chopped
  • 1 package somen noodles
  • soy sauce
  • sriracha

Heat & Chop

In a large pot on your stove, add the chopped garlic and ginger and 1/4 cup of the vegetable broth. Simmer a few minutes while the garlic and ginger cooks, then add in the mushrooms, carrots, and broccoli. Pour in the remaining broth and heat on medium.

Cook the Noodles

Cook the somen noodles according to the package directions. Once done, rinse under cool water and set aside.

Finish the Soup

Add in the bean sprouts, green onions, and cilantro to the soup. Mix for a minute, then add a heaping amount of noodles to your bowl and pour the ladle over the top. Add soy sauce and Sriracha to your individual bowl for as much salt and spice as you’d like!
