Mmmmm, barbecue sandwiches. I think every single family gathering I've ever gone to has had a form of barbecued sandwiches. Smokey, sweet, spicy; barbecue has it all. It was hard when I first thought I'd never be able to enjoy a barbecue sandwich again after going plant based, but oh, I was so wrong! These are the easiest, tastiest sandwich you can make and they are perfect to whip up in your slow-cooker.
Makes about 6 sandwiches
- 1 cup green lentils (use green not red, red lentils breakdown and get mushy)
- 1 yellow onion, diced
- 1 bell pepper (any color), diced
- pinch of red pepper flakes
- 1 cup water
- 2 cups barbecue sauce
- hamburger style buns
- red onions, sliced
- cabbage, shredded
- dill pickle relish - optional, but my favorite!
Mix lentils, onions, bell pepper, pepper flakes, water, and barbecue sauce in slow cooker and set to high for about 4 hours.
Add more water and / or barbecue sauce if you'd like it saucier or of a thinner consistency.
Add to buns and top with dill pickle relish, onions, and shredded cabbage.
