1 onion, chopped 1 clove garlic, minced 2 cups water 4 cups mushrooms, sliced 2 cups pasta 1 cup vegan sour cream 1 tbsp parsley, chopped 1 cup raw & unsalted cashews 1/2 lemon, juiced 3/4 cup almond milk 2 tbsp apple cider vinegar
Sauté the Onion, Garlic, & Mushrooms
Sauté the onion and garlic in 1 cup of water. Add in 4 cups of sliced mushrooms and the other 1 cup of water.
Make the Vegan Sour Cream
While the onions, garlic, and mushrooms cook, combine the cashews, lemon juice, almond milk, and apple cider vinegar in your Vitamix, food processor, or blender and blend until smooth. It makes about 1 cup.
Mix in the Vegan Sour Cream
Mix in the vegan sour cream with the mushrooms and continue cooking.
Cook the Noodles
While the mushrooms finish cooking, boil the noodles according to the package directions. Top the noodles with the mushroom stroganoff and finish with chopped parsley!
