My Favorite Fall Salad

This salad is so amazingly good! Its crunchy, sweet, salty and full of fresh and crispy ingredients. I've made a vinaigrette to go along with this salad, but its also good with a dash of Follow Your Heart Vegan Blue Cheese Dressing.

Salad Ingredients

My Favorite Fall Salad
  • 1 1/4 cup brussels sprouts, shaved or chopped - you can chop them yourself or save time and buy them pre-shaved. Trader Joe's has a 10oz bag that is perfect for this recipe
  • 2 cups spinach, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup mixed nuts - I like roasted, unsalted
  • 1 pomegranate, seeded (see below for a great video on how to seed)
  • 1 apple, chopped
  • 1/2 cup red onions, sliced thinly
  • 1/4 cup red grapes, sliced in half

    Toss all the ingredients together in a large bowl so they're combined.

    Dressing Ingredients

    Penzey's makes a great dry dressing starter called Country French Vinaigrette. Its made with sugar, brown mustard, salt, garlic, black pepper, lemon, onion, French tarragon, white pepper, chives, thyme, and cracked rosemary. All you need to do is combine with with water and red wine vinegar, but I added a few more ingredients to mine:

  • 1 tbsp Penzey's Country French Vinaigrette
  • 2 tbsp water
  • 3 tbsp red wine vinegar
  • juice of 1 orange
  • juice of 1 lemon

  • Combine

    Combine the Penzey's Country French Vinaigrette and 2 tbsp water and set aside for about five minutes. Juice the orange and lemon and then add to the water and vinaigrette base. Add in the red wine vinegar and cover and shake or whisk until combined.

    Pour over individual servings of the salad so it won't wilt during refrigeration. Enjoy!
