New Year's Bean Soup

Happy New Year everyone! There are some who say that eating beans on New Year's Day will bring good luck for the year ahead. So here is a super simple and quick bean soup you can whip up in under 30 minutes and enjoy the good fortune it may bring.

New Year's Bean Soup - The Aloha Files

Serves 4


New Year's Bean Soup
  • 3 cups white beans, canned (or 2.5 cups dry white beans)
  • 1 onion, chopped
  • 1 cup celery, chopped
  • 1 cup carrots, chopped
  • 2 cups dark leafy greens, chopped
  • 4 cups vegetable broth
  • 1/2 tsp white pepper

    If you want to make this recipe in under 30 minutes then use canned beans. But if you have a little more time you can use dried white beans. Rinse 2.5 cups of dry beans and then cover them with water in a saucepan and bring to a simmer for about 2 hours. Keep an eye on it as you may have to add more water to the pot. 


    Chop the veggies and add to a large stockpot with the vegetable broth. You can use spinach, kale, collards or beet greens for the dark leafy green - whatever you had on hand. I used beet greens and they were delicious. Add in the 1/2 tsp of white pepper. 


    Simmer the veggies, broth, and beans for about 30 minutes and enjoy!
