One Pot Cabbage Roll Casserole
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup green lentils
  • 1/2 cabbage head, chopped
  • 1/2 cup brown rice
  • 1 can tomato sauce
  • 3 1/2 cups vegetable broth
  • salt & pepper

  • Mix and Simmer

    Add the onion, garlic, and green lentils to a large pot on your stove with 1 cup of vegetable broth. Once the broth begins to absorb into the lentils add the remaining 2 1/2 cups of broth, 1 can of tomato sauce, the chopped cabbage, and 1/2 cup of brown rice. Mix thoroughly and continue to cook stirring often so the rice doesn't stick to the bottom of the pot. Cook for about 30-45 minutes, finish with any salt and pepper to taste and enjoy!
