You can enjoy Chinese style takeout orange sauce in a healthier way! Baked tofu and steamed broccoli make this a filling and delicious meal - sweet, spicy, tangy, and tart, you won't be disappointed!
Orange Tofu & Garlic Broccoli
- 8 oz tofu
- 2 cups orange juice
- 1/2 orange, zested
- 2 tbsp low sodium soy sauce
- 4 cloves garlic, chopped
- 2 green onions, chopped
- 4 cups broccoli, chopped
- 4 cups brown rice, cooked
- 2 tbsp corn starch
- red pepper flakes, optional
Marinate the Tofu
Cut the tofu into 1/4" thick pieces - you can do squares, rectangles, or triangles, just make sure they're about 1/4" thick.
Mix together two cups orange juice, the zest of 1/2 an orange, two tbsp low sodium soy sauce, two chopped cloves of garlic (save the other two for later), and one chopped green onion. Pour over the tofu in a container you can seal and put in your refrigerator for 1-4 hours (depending on how soon you want to eat!).
Bake the Tofu
Once the tofu is done marinating, use a slotted spoon to take the tofu out of the marinade and add to a silicon baking mat on a cookie sheet. Bake at 350 degrees for 20 minutes.
While the tofu is baking, pour the marinade into a sauce pan and bring to a gentle simmer. Mix in two tbsp of corn starch to thicken and bring heat down to low.
Steam the Broccoli & Garlic
I love using my steamer pot to steam veggies. Its basically a large pot with another pot that sits inside of it with holes in it. You fill the larger pot with water to the base of the smaller pot (usually just a few inches) and heat the water to a boil. The steam fills the smaller pot and cooks the veggies. No oil, no salt, just tasty tender crisp veggies!
Once the water is boiling, toss in the four cups of chopped broccoli and two remaining chopped garlic cloves to the smaller pot. Cover and cook about 5-10 minutes. When done, take the smaller pot out and set aside.
When the tofu is done baking, mix in a large bowl with the broccoli and garlic, and pour the orange sauce over the top and gently combine together. Top with chopped green onions, crushed red pepper flakes if desired and serve over brown rice!
