Fast Food Friday - Pesto Cavatappi


Serves 4

Ingredients

Pesto Cavatappi

  • 2 cups cavatappi (or other noodles)
  • 2 cups mushrooms, sliced
  • 2 tomatoes, chopped
  • 1/2 cup water
  • dried basil - optional
  • red pepper flakes - optional
  • Pesto Ingredients

    • 2 cups basil
    • 1/2 cup walnuts
    • 1 clove garlic
    • 1/3 cup nutritional yeast
    • 3/4 cup water
    • 1/2 lemon, juiced

Boil the Noodles

The key to getting your water to boil fast is to make sure the pot is covered. Bring a saucepan full of water to a boil. When boiling, uncover and add the noodles. Boil about 10 minutes until done (or according to your package directions).

Sauté

While the water is boiling for the noodles, sauté the mushrooms and tomatoes in a pan with 1/2 cup of water.

Make the Pesto

In your Vitamix, food processor, or blender, combine the basil, walnuts, garlic, nutritional yeast, water, and lemon juice and blend until smooth. If you need too, add more water while blending to smooth out the sauce.

Toss & Combine

Once the noodles are done, drain and rinse under cool water. Add to a large bowl and pour the pesto sauce over the top. Toss to mix together. When done, gently mix in the sautéed mushrooms and tomatoes. Sprinkle on any additional dried basil and red pepper flakes to taste!
