I just came off a 37 mile bike ride and whipped up this smoothie for a recovery drink. Oh man, its so good I barely can describe it! Super refreshing, a little sweet, and thirst quenching this is a great post-workout drink or a great breakfast on the go!
Makes about 3 pints
Pineapple, Melon, Cucumber or Post Bike Smoothie
- 1/4 cup chia seeds
- 1/4 cup pumpkin seeds
- 1/2 cantaloupe
- 1 cup frozen pineapple
- 1 cucumber
- 1 cup romaine, shredded
- 2-3 cups coconut water - optional, or just use regular water
In your Vitamix, food processor, or blender, combine all the ingredients and blend until smooth. I had to run mine through the smoothie setting on my Vitamix twice to make sure all the ingredients were blended thoroughly.
You could also substitute kale or spinach in for the romaine and add a few ice cubes if you want it extra cold. Enjoy!
