This soup is super easy, only has five ingredients, and can be quickly made for a weeknight dinner. it is super flavorful for its simplicity and is perfect for a cold, rainy day!
1 1/2 cups turnips, peeled & rougly chopped
2 cups potatoes, roughly chopped
1 cup onion, roughly chopped
4 cups spinach
2 cups potatoes, diced into 1/4" chunks
4 cups vegetable broth
Combine & Heat Soup Base
In a large pot on your stove, combine the roughly chopped turnips, potatoes, onions, and vegetable broth and simmer for about 30 minutes.
While the soup base is cooking, dice two more cups of potatoes and roast on a silicon baking sheet in your oven for 30 minutes at 375 degrees.
Once the potatoes and turnips in the soup base are soft, add the base and four cups of fresh spinach to your Vitamix, blender, or food processor (you can work in batches if everything doesn't fit) or you can use a hand blender and blend everything together in the stock pot.
Once blended, mix in the roasted potatoes and serve!
