1 cup spinach, chopped 1 cup kale, chopped 1/2 cup dried cranberries 1/2 cup blueberries 1/2 cup almonds 1/2 cup shredded carrots 1/2 bell pepper, chopped 1/2 cucumber, chopped 1 cup quinoa, cooked
Cook the Quinoa
Cook 1/2 cup of dry quinoa according to its package directions. It will make about 1 cup cooked.
Chop the spinach, kale, bell pepper, and cucumber and mix with the dried cranberries, blueberries, almonds, and quinoa (once its finished cooking). Dress with any kind of dressing you like or a splash of red wine vinegar and lemon juice.
