Serves 4

Shells & Cheese with Broccoli
  • 4 cups shell pasta
  • 1 shallot, chopped
  • 4 cloves garlic, divided
  • 1 cup vegetable broth
  • 4 cups broccoli, chopped
  • 2 cups cashews, raw & unsalted
  • 2/3 cup nutritional yeast
  • 2 cups, water
  • 1/4 cup breadcrumbs

  • Cook the Pasta

    Cook 4 cups of shell pasta in boiling water. Cook for about 10 minutes or just until they are almost fully done. Drain and rinse under cold water.


    Sauté 1 chopped shallot and 2 cloves of minced garlic in 1 cup of vegetable broth. Add in the 4 cups of chopped broccoli and stir so the broccoli coats in the broth, shallot and garlic.

    Make the Cashew Cheese Sauce

    In your Vitamix, food processor, or blender, add 2 cups of raw and unsalted cashews, 2/3 cup nutritional yeast, 2 garlic cloves, and 2 cups of water and blend until smooth.


    Transfer the pasta and broccoli to a large baking dish. Pour in the cashew cheese and mix everything together. Sprinkle 1/4 cup of breadcrumbs on top and bake at 350 degrees for 20 minutes.
