1 eggplant, chopped 1 onion, diced 1 bell pepper, chopped 2 potatoes, chopped 1 28oz can diced tomatoes 2 cups vegetable broth 1 tsp sweet paprika 1 tsp smoked paprika 1 tsp thyme 2 cups rotini noodles 1 cup fresh basil, chopped
Chop and Mix
Chop and mix all the eggplant, onion, bell pepper, potatoes, diced tomatoes, broth, paprika, and thyme into your slow cooker.
Set It and Forget It!
Cook on high heat for 3-4 hours.
Cook 2 cups of dry rotini noodles and serve the goulash over the top with fresh basil.
