A yummy salad with a bit of crunch, sweet, and sour. Great as a main meal or a side.

Serves 4-6

Ingredients

Soba Noodle Salad
  • 6 leaves napa cabbage, shredded
  • 2 bell peppers, chopped
  • 1 cup green onions, chopped
  • 1 cup carrots, chopped
  • 1 cup pomegranate, seeded (see video below for instructions on seeding)
  • 2 avocados, chopped
  • 1/2 cup almonds, smashed
  • 1 lime, juiced
  • soba noodles - a handful about 1" in diameter


  • Chop & Mix

    Chop the napa cabbage, bell peppers, green onions, and carrots, and toss together. Seed the pomegranate and mix in. Gently toss in the diced avocado and almonds. Juice a lime and mix in as well.

    Soba Noodles

    You should use about 1” in diameter of a handful of noodles. Cook the soba noodles according to the package directions, usually about 4 minutes in boiling water, then rinse under cold water. Mix in with the veggies.

    If you want a little extra pizzazz, add in a touch of Trader Joe’s Asian Style Spicy Peanut Jalapeño Vinaigrette.
