Farro is another ancient whole grain that seems to be making a comeback in modern dishes. Its high in fiber, iron and protein. You can easily substitute barley, wheat berries, or quinoa in this recipe if you'd like. A great summer salad - filling, sweet, and crunchy with a zip of balsamic splashed over the top.
Spinach, Strawberry, Farro & Beet Salad
- 2 cups spinach
- 1 cup cooked & cooled beets, sliced (I used golden beets, but you can also use red beets)
- 1 cup strawberries, sliced
- 1 cup cooked & cooled farro
- 1/2 red onion, sliced
- 1/2 cup almonds, sliced
- 1/2 cup pumpkin seeds
Cook & Combine
Cook and cool the beets and farro ahead of time before assembling this dish and combine the ingredients together. This salad is delicious with Annie's Fat Free Raspberry Balsamic Vinaigrette Dressing.
