Split Pea Soup

In the need of some serious comfort food? Make this super simple split pea soup - it takes about an hour to get those split peas soft and chewy, but only about 5 minutes to put it together. Then sit back, relax, and enjoy the amazing aromas as this soup comes together.

Ingredients

Split Pea Soup
  • 1 cup green or yellow split peas
  • 1 onion, chopped
  • 1 cup celery, chopped
  • 2 cups carrots, chopped
  • 2 cups potatoes, chopped
  • 2 cloves garlic, minced
  • 8 cups vegetable broth
  • 2 tbsp parsley
  • 1/2 tbsp thyme
  • 2 tbsp chives, chopped

  • Chop & Combine

    Chop all the veggies and add to a large pot on your stove with 1 cup of split peas and 8 cups of vegetable broth.

    Semi-cover and cook on medium high heat, stirring occasionally, for about an hour until the split peas are soft and have started to break down, thickening the soup.

    Top with any additional fresh parsley, thyme, and chives and enjoy!
