St Patrick's Day - Green Smoothie

St Patrick's Day - Green Smoothie

Makes about 2 smoothies

Ingredients

Green Smoothie
  • 1/4 cup pumpkin seeds
  • 1/4 cup flax seeds
  • 1/4 cup chia seeds
  • 1 apple
  • 2 cups frozen pineapple
  • 1" piece of ginger, skin peeled
  • 1 cup kale
  • 1 cup spinach
  • 3 cups water

  • Vitamix

    Add in the seeds first and then everything on top of that. Blend away! I usually blend this on 2 cycles just to make sure everything is thoroughly pureed

    St Patrick's Day - Irish Nachos & Cashew Cheese

    Serves 2-4

    Ingredients

    Irish Nachos Ingredients
  • 4 potatoes, sliced into wedges
  • 2 tbsp chili powder (divided)
  • 2 tbsp cumin (divided)
  • 1/2 onion, diced
  • 1/2 cup cooked quinoa
  • 1/2 cup lentils
  • 1 cup water
  • 3-4 green onions, chopped
  • 1/2 cup cilantro, chopped
  • 1 cup lettuce, chopped
  • 1/2 cup Quick Salsa
  • Sriracha

  • Cashew Cheese Ingredients
  • 2 cups raw, unsalted cashews
  • 1 cup water
  • 1 clove garlic
  • 1/3 cup nutritional yeast

    Cook the Quinoa & Lentils

    Cook the quinoa according to its directions. While the quinoa is cooking and the potatoes are roasting, saute 1/2 of an onion in 1 cup of water for about 5 minutes. Add in the lentils, 1 tbsp of cumin, and 1 tbsp of chili powder and simmer until the lentils have cooked through. Once the quinoa is done cooking, add 1/2 cup of cooked quinoa to the lentils and onions.

    The Cashew Cheese

    Cashew Cheese is delicious and super easy to make. Combine 2 cups of raw, unsalted cashews with 1 clove of garlic and 1/3 cup of nutritional yeast to your Vitamix, food processor, or blender. Add in 1/2 cup of water and start pureeing. Continue to add in the water until you have a thick paste. Blend until smooth.

    Assemble

    Assemble the Irish Nachos as follows: layer the potatoes on the bottom, top with salsa, chopped lettuce, cilantro, green onions, cashew cheese, and sriracha. Enjoy!

    St. Patrick's Day - Irish Cabbage Soup

    Serves 4-6

    Ingredients

    Irish Cabbage Soup
  • 1/2 onion, chopped
  • 2 cups potatoes, diced
  • 2 cups carrots or parsnips, sliced
  • 1 turnip, peeled & diced
  • 4 cups cabbage, roughly chopped
  • 4 cups vegetable broth
  • 2 cups water
  • 1 tsp black pepper
  • 2 bay leaves
  • 1/2 tsp yellow mustard seeds

  • Simmer

    Chop and combine everything in a large stockpot on your stove. Simmer for 30-45 minutes or until the potatoes, carrots, and turnips are soft. Remove bay leaves before eating.

    Ingredients

    Beefless Beer Stew
  • 1 onion, chopped
  • 2 portobello mushrooms, chopped
  • 1 cup celery, chopped
  • 1 cup carrots, chopped
  • 2 cups potatoes, chopped
  • 1 cup frozen peas
  • 1 can dark beer
  • 2 cups vegetable broth
  • 2 tbsp cornstarch
  • 1 tsp thyme, fresh or dried
  • salt & pepper to taste

  • VEGAN BEER

    Surprisingly, a lot of beers aren’t vegan. Many beers are filtered through animal products so even though their ingredients are vegan, the process in which the beer is made isn’t. Barnivore has a GREAT website where you can search all types of alcoholic beverages to find out if they are vegan. I used Anderson Valley Barnes Flats Oatmeal Stout, which according to Barnivore IS vegan. 

    CHOP AND COMBINE

    Chop the onion, mushrooms, celery, and carrots and add to a large pot on your stove with 1 tsp of thyme and 1 cup of vegetable broth. After about 5 minutes, add in the potatoes, peas, and 1 can of dark beer.

    Continue to cook the veggies for another 20 minutes while the beer cooks down. Now add in 1 more cup of vegetable broth and 2 tbsp of cornstarch. Continue cooking for another 20 minutes until the veggies are nice and soft.

    Serve with any salt and pepper to taste!
