Chili is my go to food. I can make it in 30 minutes or I can slow cook it in the crockpot all day. Its super filling, comforting, and absolutely delicious. I've recently come around to the idea of adding sweet potatoes or butternut squash to my chili. I love sweet potatoes (and squash) and chili, but putting them together never seemed like a good idea to me. Until I did - and I'm never looking back!
Sweet Potato & Black Bean Chili
- 2 cans black beans, drained & rinsed
- 2 cans diced tomatoes
- 1 can tomato sauce
- 1 cup water
- 1 white or yellow onion, diced
- 5 carrots, diced
- 2 sweet potatoes, peeled & diced OR 1/2 butternut squash, peeled & diced
- 2 tbsp cumin
- 2 tbsp chili powder
- 1 cup frozen corn
Combine the beans, tomatoes, tomato sauce, water, onions, carrots, sweet potatoes or butternut squash, cumin, chili powder, and frozen corn together in a crockpot or stock pot on your stove.
If cooking in your crockpot, set on high for 4 hours, then on low for 2 hours (total cooking time = 6 hours).
If cooking on your stove, cook on medium high for about an hour.
