Ingredients

Taco Salad

  • 1 can black beans, drained & rinsed
  • 2 tomatoes, diced
  • 2 green onions, chopped
  • 1 head romaine lettuce, chopped
  • 1 can black olives, sliced
  • 1 green bell pepper, chopped
  • 1 avocado, chopped
  • 1 lime, juiced
  • 2-3 cups tortilla chips
  • 1 cup salsa
  • 1/2 cup cilantro, chopped - optional
  • Tapatio - optional
  • 1/2 cup Pumpkin Seeds - optional
  • Cashew Cheese

  • 1 cup raw cashews
  • 1 clove garlic
  • 1/3 cup nutritional yeast
  • 1/2 cup water

Cashew Cheese

In your Vitamix, food processor, or blender, combine 1 cup of raw cashews, 1 garlic clove, 1/3 cup nutritional yeast, and 1/2 a cup of water. Blend until smooth! (You can pour in more water as it blends if you need to thin out the sauce!)

Chop & Mix

This is crazy easy. Chop and mix everything together. Drizzle the salsa on top, squeeze on some cashew cheese, and add as much Tapatio as you'd like for spice!
