You can EASILY make this dinner in under 30 minutes. Just a little combining to make the peanut sauce, a little heating of the noodles and veggies, toss together and ta-dah! Thai Noodles in Peanut Sauce!
Thai Noodles in Peanut Sauce
- 1 can light coconut milk
- 1/2 cup peanut butter
- 1 tbsp Sriracha (or other hot sauce)
- 2 tbsp low sodium soy sauce
- 1 lime, juiced
- 1 package Pad Thai Noodles
- 4 cups frozen broccoli, thawed
- 2 cups shredded carrots
- 1 cup green onions, chopped
- 1/2 cup peanuts
- limes, cut into quarters
- Sriracha, to taste
- soy sauce, to taste
The Peanut Sauce
Ready for this? Its SO easy! Combine 1 can of light coconut milk, 1/2 cup of peanut butter, 1 tbsp of Sriracha, 2 tbsp of low sodium soy sauce, and the juice of 1 lime to your Vitamix, food processor, or blender and blend until smooth.
Cook the Noodles
Following the directions on your pad thai noodles, cook the noodles. I had to boil a large pot of water and cook mine for about 5 minutes.
Once done cooking, drain and rinse under cold water.
This is a great recipe to use a wok for if you have one. If you don't - no problem! Just use a large pot on your stove.
Pour the sauce into your wok or large pot and heat on medium heat until it starts to barely bubble, about 3-4 minutes. Add in the cooked and cooled noodles and toss through. Add in the thawed frozen broccoli (because its quick and easy!), shredded carrots, most of the green onions, and cilantro and toss together.
Add a good heapful of noodles to your bowl and top with any additional green onions, cilantro, peanuts, lime juice, sriracha, and soy sauce to taste.
