Three Bean Winter Chili

Its time for some winter chili! The combination of garbanzo, black, and white beans makes this chili super filling and hearty for a cold winter evening. Throw it in your crockpot or make it on your stove for a satisfying dinner!

Ingredients

Three Bean Winter Chili

  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1-2 garlic cloves, minced
  • 2 cups water
  • 1 15 oz can white beans
  • 1 15 oz can black beans
  • 1 15 oz can garbanzo beans
  • 2 sweet potatoes, peeled & diced
  • 1 15 oz can tomato sauce
  • 2 cups fresh diced tomatoes, or 1 15 oz can diced tomatoes
  • 1/2 cup quinoa, uncooked
  • 1 tbsp paprika
  • 1 tbsp oregano
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • avocado, optional
  • limes, optional

Stove Top Instructions

Combine the onion, bell pepper, garlic and water together in a large pot on your stove. While those veggies are cooking, peel and chop two sweet potatoes and add to the pot. Do not drain the cans of beans, just add all the beans and their juice into the pot. Add in one 15 oz can of tomato sauce and either two cups of freshly chopped tomatoes, or one 15 oz can of diced tomatoes. Mix in the paprika, oregano, chili powder, and cumin, and pour in one half cup of quinoa. Stir until thoroughly mixed and let cook on medium for 30- 45 minutes, until the sweet potatoes are cooked through.

Top with lime juice and avocado upon serving!

Crockpot Instructions

Combine all the ingredients in your crockpot and set on high for 4 hours.
