This is a new take on Huevos Rancheros and it is sooooo good. The tofu is given a little spice and a filler of black beans. The bean-a-dilla is filled with refried beans and is toasted to an awesome crunch on the outside. Its topped with green salsa and a touch of hot sauce. A super filling breakfast I want to eat every day!
- Tofu Rancheros Ingredients
- 1/2 block tofu, mashed
- 1/4 tsp turmeric
- 1/4 tsp tamari or soy sauce
- pinch of salt and pepper
- 1/2 onion, chopped
- 1/2 jalapeno, chopped
- 1/4 tsp cumin
- 1/3 can black beans, drained & rinsed
- 1 can vegetarian refried beans
- 8 corn tortillas
- hot sauce
- 1 cup green salsa
- Green Salsa Ingredients
- 3 cups yellow / green tomatoes, diced
- 1 1/2 cups green peppers, diced
- 1/2 cup tomatillos, diced
- 1/2 jalapeno, diced
- 2 green onions, chopped
- 1/4 cup cilantro, chopped
- juice of 2 lemons
- juice of 1 lime
Chop all the green salsa ingredients and mix together with the lime and lemon juice.
Mash the tofu in a large bowl with a potato masher and add in the turmeric, tamari or soy sauce, cumin, salt and pepper, onion, and jalapeño. Gently mix in the 1/3 can of black beans.
In a large skillet, cook the tofu and beans stirring gently. You’ll cook them about 10 minutes and they’ll begin to ﬂuﬀen up and look like scrambled eggs as the moisture is cooked out.
While the tofu is cooking, warm up a can of vegetarian refried beans in the microwave for about 2 minutes - just to heat it through.
Scoop a good amount of the beans onto a corn tortilla and add it to another skillet, with another corn tortilla on top - like you’d be making a quesadilla, you’re just replacing the cheese with refried beans.
If you don’t have enough room in your skillet for more than one bean-a-dilla, heat your oven to 175 and add each ﬁnished bean-a-dilla to a cookie sheet in the oven to keep it warm.
Assemble the tofu rancheros by adding one bean-a-dilla to a plate and top with a good amount of the tofu and black beans. Spoon on a heaping amount of the green salsa and top with hot sauce for a delicious kick!
