Vega Banana Pancakes

I've been craving pancakes for a while now, but wanted to find a good non-dairy, no egg recipe. Vega has a ton of great plant-based recipes INCLUDING a pancake recipe! I made it this weekend, but modified it a bit taking out the coconut oil and Vega Sport Performance Protein Vanilla. And they were DELICIOUS!

Vega Banana Pancakes
  • 2 large bananas, one for the batter, one for topping the pancakes
  • 1 tsp vanilla extract
  • 1 cup almond milk
  • 1 cup gluten free flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp cinnamon
  • Earth Balance Buttery Spread
  • maple syrup

  • Combine

    In a bowl, combine the flour, baking powder, baking soda, and cinnamon together.


    In your Vitamix, food processor, or blender, add 1 banana, the vanilla extract, and almond milk and puree until blended together smoothly. Slowly add in the dry ingredients until everything is incorporated together.


    Instead of spraying a griddle with olive oil we used about two tablespoons of the Earth Balance Butter spread to keep the batter from sticking to the pan. Since we were working on a small pan and could only make two pancakes at a time, we kept the oven at 170 degrees and added each new batch of pancakes to an oven safe plate to keep them warm.

    Top with more Earth Balance Butter Spread if desired and maple syrup. Its also good with a few sliced bananas!
