Vegan Korma

Korma is one of my FAVORITE things to get when I go out for Indian food. Its a little spicy, saucy, and so delicious. I've made a new version with a few substitutes that makes this a super tasty dinner on those cold winter nights!

Serves 6

Ingredients

Vegan Korma
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1" piece ginger, minced
  • 1 tbsp coriander
  • 1 tbsp curry powder
  • 1 tsp garam masala
  • 1 tsp turmeric
  • 1 pinch cayenne pepper
  • 1/2 lemon, juiced
  • 2 cups vegetable broth
  • 1 can lite coconut milk
  • 2 golden potatoes, chopped
  • 1 cup cauliflower, chopped
  • 1 red bell pepper, chopped
  • 2 cups meatless meatballs (like Trader Joe's, or IKEA, or Gardein)
  • 1 cup frozen peas
  • 1 cup spinach, chopped
  • brown rice

  • Combine the Onion, Garlic, Ginger & Spices

    Combine the chopped onion, garlic, ginger, and all the spices in a large pot. Mix together.

    Simmer

    Add in the lemon juice, vegetable broth, and coconut milk and bring to a gentle simmer. Once simmering, add in the potatoes, cauliflower, and red bell pepper. Continue cooking until the potatoes and cauliflower are soft.

    Mix

    Mix in 2 cups of frozen Meatless Meatballs. (Trader Joe's makes a great version, and so does IKEA, and Gardein.) Also mix in the frozen peas and chopped spinach and cook for about another 5 minutes.

    Serve

    Serve over brown rice and enjoy!
