Vegetable Noodle Soup

Here's a quick 30 minute comforting soup that is incredibly simple to make and incredibly delicious to eat.

Vegetable Noodle Soup

Serves 4-6

Ingredients

Vegetable Noodle Soup

  • 2 cups onions, chopped
  • 2 cups carrots, peeled & chopped
  • 2 cups celery, chopped
  • 2 cups swiss chard, chopped (or spinach or kale)
  • 4 cup vegetable broth
  • 4 cups water
  • 2 cups noodles, dry

Simmer

In a large pot on your stove, combine all the ingredients except the noodles and bring to a simmer. Reduce heat and cook for about 30 minutes.

The Noodles

I like to cook the noodles separately and add them in at the end. I think it keeps the noodles from getting too soft or absorbing all the broth.

Cook the noodles separately and then rinse under cold water. Add to each bowl before serving.
